I need some recipes to suit my picky eating and my specialized diet - help please!?
They also need to be simple because, while I'm not a bad cook, I'm not terribly good with spices and I don't have a lot of time either. I'm also on a budget so if we could incorporate frozen vegetables as much as possible that would be great.
My requirements are: no meat, no sugar and no white carbs (but whole grain breads and pastas are great, and dairy and eggs are fine too)
I like Italian food, Mexican food, cheesy things, classics like deli-style food, sandwiches and onion rings. I hate southern food. I don't like a lot of Asian food but some of it's ok. I'm not fond of cabbage or cauliflower.
Wholegrain pasta shells with veggies, tossed with cheese sauce (nice with a brown bread roll to soak up leftover cheese sauce)
Wholegrain pasta spirals with some pasta sauce, cook and toss in oven covered with cheese until cheese brown
Nachos topped with beans, chunky salsa, lots of cheese and a side of sour cream/guacamole
Veggie pies! put the half-heated veggies with some mashed potato and fill pie cases (or make your own) then bake
Gnocchi pasta with sauteed mushrooms and peas in cream sauce (put a bit of garlic and white wine in cream and serve with fresh parmesan)
Potato salad (mmmmmmmm) with mayo and whole seeded-mustard and boiled egg
Egg sandwiches / Cheese toasties / Salad rolls
Veggie pizza (see how many different cheeses you can put on 1 pizza and still have it taste good! And corn tastes unbelievably good on pizza)
Put the frozen veggies between sheets of lasagne pasta, cover with pasta sauce and cheese, bake until done.
Tortilla Stack - in a baking tray, lay one tortilla, sprinkle with cheese, put bean/salsa mix (maybe throw in some frozen veggies as well?) on then keep repeating, then when done - cover with salsa and cheese and bake
Breakfast for dinner!
Eggs on toast, hash browns and baked beans
Stir fry veggies with tofu and hokkien noodles with soy sauce
Spanish Omelette - thin sliced potato, thin sliced red pepper in a frittata like omelette
Patatas Bravas - baked potato chunks in a spicy red sauce
with veggies on side
Veggie risotto
